Well, the holidays are behind us and I don't know about you guys, but I am so ready to eat some vegetables! For most of the year I think I could never get tired of cookies and cake and chocolates, and then the holidays happen.
I'm not one for New Year's resolutions, but I do find myself trying to eat healthier this time of year, just because I'm a little worn out on all the indulgence.
With that in mind I've rounded up a few of my favorite healthier winter recipes that I love to enjoy this time of year.
2. Ribollita - This stuff is super meal-worthy, with hearty beans, juicy tomatoes, kale and crusty bread. That's right, the bread goes in the soup so it sucks up the broth and you get a delicious mouthful with every bite!
3. Farro Salad with Herbed Balsamic Vinaigrette - January is the season of healthy salads. But also, it's freezing outside, so who wants to eat a big plate of cold veggies? The solution: eat a hearty grain salad like this one!
4. Greek Chickpea Burgers - These are super easy to make and really delicious, thanks to zippy lemon juice, Kalamata olives and fresh oregano.
6. Tempeh-Stuffed Sweet Potatoes - This recipe doesn't get a ton of attention, but it's probably one of my absolute favorites on the site. With gingery pan-fried tempeh and creamy almond butter sauce, these stuffed potatoes are totally scrumptious and pretty darn easy to make!
7. Vegan Eggplant Rollatini - This one is kind of like manicotti, but with eggplant slices instead of pasta. It's great when you want something healthy but are also craving some comfort food!
8. Lentil Shawarma Pitas - The end of the holidays means back to work (or school) for many of us. Pack these healthy sandwiches in your lunchbox.
10. Vegan Philly Cheesesteak Sandwiches - Okay, I know the Super Bowl is in February, but it's right at the beginning of February, so you'll need to plan your menu this month. These definitely belong on it!
